The story of Dalter is the story of freshly grated cheese and of a long process of innovation to make the Italian dairy tradition famous worldwide.
Since 1978, a long process of innovation
Dalter Alimentari was officially founded on 26 February 1978 from an idea by 4 entrepreneurial friends from Emilia, Angelo Ricotti, Ottavio Dall’Argine, Anselmo Terenziani and Carlo Merlini, who combined their respective experience in packaging and Parmigiano Reggiano. Their goal was to rise to a challenge: to preserve the nutritional properties of freshly grated Parmigiano Reggiano for several weeks. After over 3 years of trials, tasting and checks, they created their first product, a metal tin containing 1kg of freshly grated Parmigiano Reggiano cheese. They sent it out to restaurants and cheese distributors in the area, who were amazed to try this product which, at the time, was considered a real revolution. Once people had gotten over their initial mental resistance to pre-grated parmesan cheese, the product also spread into catering services, pasta factories, cheese suppliers, delicatessens and all throughout the restaurant industry, everyone who would appreciate a quality product with guaranteed service.
Dalter was founded through the invention of a product, one which it continued to develop by dedicating its time and resources to innovation, achieving a leading position in dairy technology and research. The company’s path has been marked by many product and portion size innovations.
The first 5g tub of grated cheese was released in 1982, created thanks to a piece of machinery used for making single serving jams, which was completely rebuilt by the Dalter technical staff so it could package grated cheese. These packs are still the only ones of their kind on the market. In 1995, it was the turn of the first circular tubs intended for household use and in 1998, a new cut was launched: Parmigiano Reggiano flakes.
The 2000s were marked by two truly astonishing innovations: the refillable cheese graters which are dishwasher-safe grater comes in a stand-up plastic pack containing two 50g pieces of Parmigiano Reggiano. Over the years, the range has also been expanded by designing and developing tailor made products for major retail brands, international chains of commercial catering and multinational food manufacturing.
Since 2010 we also become cheese manufacturer, in the dairy of Selvapiana (Province of Reggio Emilia), the first of the three companies of Parmigiano Reggiano to enter our integrated supply chain project.
Already in 2001 Dalter obtained the Quality certification according to the BCR standards, demonstrating its strong vocation to export. After a few years, the IFS certification and the ICEA certification for organic products will be added, demonstrating the constant attention to quality at 360 °.
Today, Dalter is organised as a real group, operating all throughout Europe with many outlets on international markets. “The DalterFood Group’s mission”, confirms their President, Stefano Ricotti, “goes beyond a purely commercial objective: we intend to be ambassadors for Italian excellence around the world.
