Performance key

Stringy effect
Defined as the blend’s ability to melt, while maintaining a visible structure, when used as topping on pizza, for example. The assessment was carried out using mozzarella as a benchmark – corresponding to the value 5, indicating the highest performance.
Browning
Defined as the ability of the blend to give the dish a pleasant golden colour on the surface where it may be used, for example, as a topping on lasagne or pasta casseroles. The assessment was carried out using 30-month Parmigiano Reggiano as a benchmark – corresponding to the value 5, indicating the best browning.
Grate-ability
Defined as the blend’s ability to make a dish that is crispy on the surface, but not excessively dry, thus creating a pleasant contrast in the sensation on the palate, as in the case of vegetables au gratin. The assessment was carried out using 30-month Parmigiano Reggiano as a benchmark – corresponding to the value 5, indicating the best for grating.
Seasoning ability
Defined as the blend’s ability to transfer its flavour to enhance and season the dish. The assessment was carried out using 30-month Parmigiano Reggiano as a benchmark – corresponding to the value 5 – which has the best seasoning ability.

ad-hoc BLENDS FOR EVERY PURPOSE

In preparing each different recipe, the use of grated cheese as an ingredient gives the dish different characteristics in terms of browning, creaminess, flavour and crispness.
Our Quality Assurance Office, in synergy with the Research&Development department, has carried out a careful analysis of the main properties that characterise our blends, and that are fundamental in guiding our clients’ choices.
